Ingredients:

  • 1 cup raw cashews (or any nut you prefer)

  • 1/2 cup unsweetened shredded coconut

  • 1/2 cup pumpkin puree (fresh or canned with no additives)

  • 2 tbsp chia seeds (packed with fiber and detoxifying properties)

  • 1/4 cup flaxseeds (rich in omega-3s and aids digestion)

  • 1/4 cup dates (whole food natural sweetener)

  • 1 tsp cinnamon (anti-inflammatory and detoxifying)

  • 1/2 tsp ground ginger (great for digestion and immune support)

  • 1/4 tsp nutmeg (adds warmth and flavor)

  • 1/4 tsp allspice (optional, for extra spice)

  • 1/2 tsp vanilla extract

  • Pinch of sea salt

Instructions:

  1. Pulse the cashews and shredded coconut in a food processor until they form a coarse meal.

  2. Add the pumpkin puree, chia seeds, flaxseeds, dates, spices, vanilla extract, and sea salt to the processor. Pulse again until everything is well combined and forms a sticky dough.

  3. Using a tablespoon, scoop the mixture and roll it into bite-sized balls.

  4. Chill in the fridge for at least 30 minutes to firm up before serving.
